Rice Flour Chapati

Cook time: 6 minutes
Serves 4 people

Ingredients

  • 2c Rice Flour
  • 1c Onion, chopped
  • 3 Tbsp Cilantro, chopped
  • 1 Serrano Pepper, chopped
  • 1 Tbsp Ginger, grated
  • 1 tsp Cumin Seeds
  • 3/4 tsp Salt
  • 1 Tbsp Yogurt
  • 1/4c Coconut, unsweetened shredded
  • Oil

Directions

  1. In large bowl, mix all ingredients except oil.

  2. Place 1/4 tsp oil in pan on medium to medium-high heat.

  3. Roll 2" ball of dough. Flatten into circle.

  4. Place flattened dough into pan. Cook 3-4 minutes per side. Pressing down during cook time.

  5. Note: You can use parchment paper as base to flatten ball onto for easy transfer into pan.
