Potato bread stuffing

Ingredients

  • 1/2 C olive oil
  • 1 C onions diced
  • ! C diced celery
  • 1 C grated carrots
  • !/8 C chopped garlic
  • 1 T ground sage
  • 1 T ground thyme
  • 1/2 pound baby spinach washed and dried
  • 1/2 loaf potato bread cubed small
  • 1C crumbled feta cheese
  • 1/2 bunch fresh parsley chopped
  • 16 oz chicken broth
  • 1 egg

Directions

  1. In large stockpot heat olive oil

  2. Add onions, celery, carrots and garlic

  3. Cook until semi soft

  4. Stir in sage and thyme

  5. Add spinach and cook until wilted

  6. Pour mixture in large bowl

  7. Add bread, feta cheese and parsley

  8. Combine chicken broth and eggs, then whip

  9. Pour liquid into vegetable mix and mix together

  10. Spray 8" X 11" baking dish

  11. Place mixture in baking dish

  12. Bake 40 min at 375F
