Squash and corn gratin

Ingredients

  • 1C onion chopped
  • 2 T olive oil
  • 6 C butternut squash cut into 3/4" cubes
  • 2 C frozen corn
  • 1 small diced red pepper
  • 8 oz shredded pepperjack cheese
  • 2 T flour
  • 1 1/2 C heavy cream
  • 1/3 C diced breadcrumbs + 1/3 C grate parmesan cheese
  • T chives
  • Salt and pepper

Directions

  1. In deep skillet saute onion in oil 4 min

  2. Add squash and cook 4 min

  3. Add corn, pepper, salt, and pepper

  4. Saute 2 min

  5. Put 1/2 mixture in sprayed 2 qt shallow baking dish

  6. Sprinkle with 1/2 of jack cheese

  7. Top with rest of squash, then rest of cheese

  8. Stir flour into cream & pour over casserole

  9. Sprinkle chives and bread crumb mix on top

  10. Bake at 375F one hour

  11. Let stand 10 min before serving
