Skillet Beef and Bean Nachos

Ingredients

  • 1 1/2 lbs. ground chuck
  • 15 oz. can black beans, rinsed and drained
  • 12 oz. bag tortilla chips
  • Creamy Cheese Sauce (see recipe)
  • 1 cup pico de gallo
  • 1 cup mild pickled jalapeno slices
  • 1/2 cup sour cream
  • 1 tbsp. chopped fresh cilantro
  • Garnish: lime wedges

Directions

  1. In a 12-inch cast-iron skillet, cook beef over medium-high heat until browned and crumbly. Drain. Place beef in a medium bowl; set aside.

  2. Add beans to pot; cook until warmed, about 3 minutes. Add beans to beef, stirring to combine. Wipe skillet clean. Arrange chips in skillet; drizzle with Creamy Cheese Sauce. Layer with beef mixture, pico de gallo, jalapenos, sour cream, and cilantro. Garnish with lime wedges. Serve immediately.
