Melting Potatoes

  • 2 lbs potatoes, cut into 1 inch thick slices
  • 1/4 lb butter melted
  • 2 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup broth
  • 6 cloves garlic, peeled and chopped


  1. Preheat oven to 475 degrees

  2. Preheat cast iron pan in oven

  3. Toss potato slices with butter and spices

  4. Lay out the potatoes in a single layer in the hot skillet and bake about 15 minutes until the edges are browned

  5. Remove skillet and turn potatoes, roast another 15 minutes

  6. Remove skillet and flip potatoes once more, add the broth and garlic. Roast for another 10-15 minutes to reduce the sauce.
