Chicken Tortilla Soup

Ingredients

  • 2 stalks of celery, sliced down the center lengthwise, then chopped
  • 1/2 medium onion, chopped
  • 1/2 cup frozen corn
  • 1/2 can black beans, drained and rinsed
  • 3 cups chicken stock
  • 1 cup water
  • 16 oz. picante sauce
  • 4 garlic cloves, minced
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 cup diced precooked chicken
  • Optional toppings:
  • green onion, chopped
  • tortilla strips
  • sour cream
  • Mexican blend or taco shredded cheese
  • Jalapenos

Directions

  1. Place the celery and onion in the crock.

  2. Add the corn and black beans.

  3. Mix well, then add the chicken stock, water, picante sauce, garlic, cumin, chili powder, and paprika.

  4. Place the precooked chicken into the crock and mix well.

  5. Cover and cook on LOW for 6 hours.

  6. Ladle into bowls and top with any or all of the optional toppings you want.
