Winter Stew

Ingredients

  • 2 tbsp. all-purpose flour
  • 1/8 tsp pepper
  • 1 lb. beef, cut into 1-inch cubes
  • 1 tbsp. vegetable oil
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 10.5 oz. can condensed beef broth
  • 1/2 cup water
  • 1/2 tsp crushed dried thyme leaves
  • 1 bay leaf
  • 4 medium carrots, cut into 1-inch pieces
  • 3 medium potatoes, cut into quarters
  • 1 tsp seasoned pepper
  • 1 tbsp. chives

Directions

  1. Mix flour and 1/8 tsp pepper.

  2. Coat beef with flour mixture.

  3. In pan over medium heat, heat oil.

  4. Add beef, onion, and celery and cook until browned on all sides. Place in crock.

  5. Add broth, water, thyme, bay leaf, carrots, potatoes, seasoned pepper and chives to crock.

  6. Cover and cook on HIGH for 4-5 hours.
