Apple-Blue Cheese Mini Phyllo Cups

Ingredients

  • 1 shallot, chopped
  • 1 small apple, peeled and diced
  • 1 tsp chopped thyme
  • Pinch of salt
  • Butter
  • Prebaked phyllo shells
  • Crumbled blue cheese
  • Chopped parsley

Directions

  1. Saute shallot, apple, thyme and a pinch of salt in butter until soft, about 8 minutes. Divide among the phyllo shells; top with blue cheese. Bake at 375 until melted, about 15 minutes. Top with chopped parsley.
