Spicy Peanut-Coconut Dip

Ingredients

  • 1/2 cup unsweetened coconut cream
  • 1/2 cup creamy peanut butter
  • 2 tbsp. soy sauce
  • 1 tbsp. sambal oelek
  • 1 tbsp. rice vinegar
  • 1 tbsp. honey
  • 2 tsp grated peeled fresh ginger
  • Kosher salt
  • Chopped peanuts and fresh cilantro, for topping
  • Cucumber spears and carrot sticks, for serving

Directions

  1. Puree the coconut cream, peanut butter, soy sauce, sambal oelek, vinegar, honey, ginger and 1/2 tsp salt in a blender until smooth.

  2. Transfer to a bowl and top with peanuts and cilantro. Serve with cucumbers and carrots.
