Banana Bread

Ingredients

  • Wet:
  • - 2 large spotty bananas mashed (about 260 gr)
  • - 1 large egg (55 ish gr)
  • - 2 tbsp nut butter (I did peanut butter - 32 gr)
  • - 2 tbsp honey or maple syrup (42 gr)
  • - 1/2 cup unsweetened almond milk (120 gr)
  • - 1 tsp vanilla extract
  • Dry:
  • - 1 cup all purpose flour (120 gr)
  • - 1 cup white whole wheat flour (120 gr)
  • - 2 tsp ground cinnamon
  • - 1/4 tsp coarse salt
  • - 2 tsp baking powder
  • - (optional) very thin slices of banana and 1 tsp cinnamon sugar to decorate

Directions

  1. kes 8 generous slices. Preheat oven to 350F and grease a loaf pan (mine is 8.5 by 4.5 inches).

  2. Thoroughly combine all wet (I use a whisk). Mix all dry. Pour dry into wet, combine but don’t overmix. Pour into loaf pan, top with optional toppings and bake until center is cooked. Mine took about 50 minutes.
