Apple Pumpkin Peanut Butter bars

Ingredients

  • 2 cups rolled oats
  • - 1 cup whole wheat flour
  • - 1 tsp baking powder
  • - 1 tsp pumpkin pie spice
  • - 1 tsp cinnamon
  • - 1/4 tsp salt
  • - 1 egg
  • - 1 cup pumpkin puree
  • - 1 cup unsweetened almond milk
  • - 2 tbsp nut/seed butter
  • - 1 tsp vanilla
  • - 3 tbsp honey/maple syrup
  • - 1 large apple diced small (I used honeycrisp)
  • - (optional) 2-3 tbsp mini chocolate chips to sprinkle

Directions

  1. Makes 8 bars in my mini loaf pan. Do not fret if you don’t have a mini loaf pan. Spray a regular 8×8 cake pan with oil and you can cut them into bars once baked (but seriously buy a mini loaf pan!)

  2. eat oven to 375. Spray the pan with oil. Combine all dry in a small bowl and fold in diced apple. Combine all wet in a large bowl and whisk thoroughly. Pour dry into wet, mix until combined and transfer to the pan. Sprinkle with optional chocolate chips.

  3. If making mini loaves (or muffins) bake for 20-30 minutes.

  4. If using the 8×8 cake pan bake for 30-40 minutes until a toothpick comes out cleanish. Let the “cake” cool completely on a wire rack before cutting into 8 bars.
