Spinach Rice Salad

I’ve been making this salad for over 20 years! Great salad for barbecues ans summer picnics. I sometimes use brown rice but I think it works better with regular rice.

Cook time: 75 minutes
Serves 6 people


  • 1 cup rice
  • 1/2 cup bottled Italian dressing (Viva Italian 7 Seas)
  • 1 Tbs soy sauce
  • 1/2 tsp sugar
  • 2 cups fresh spinach, cut into chiffonade
  • 1/2 cup sliced celery
  • 1/2 cup sliced green onions, including tops
  • 1/3 cup crumbled crisp bacon


  1. Cook rice according to package directions; transfer to bowl. Cool slightly. Combine dressing, soy sauce and sugar, and add to rice. Cover and chill. Fold in remaining ingredients before serving.
