Penne with Spicy Vodka Tomato Cream Sauce

Ingredients

  • 1 tbsp. olive oil
  • 1/2 lb. spicy Italian sausage
  • 4 garlic cloves, minced
  • 28 oz. can crushed tomatoes
  • 1/2 tsp salt
  • 1 lb. penne
  • 1/2 cup whipping cream
  • 2 tbsp. vodka
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat oil in a large, deep skillet over medium heat. Add sausage; cook, stirring and breaking up lumps, until browned, about 5 minutes. Stir in garlic; cook 1 minute. Stir in tomatoes and salt, then bring to a boil. Reduce heat and simmer, uncovered and stirring occasionally, 15 minutes.

  2. Meanwhile, cook pasta as directed; drain.

  3. Stir cream and vodka into skillet and bring to a boil. Reduce heat to low and add pasta, stirring until well coated. Stir in parsley.
