Roasted Potatoes with Parsley

Ingredients

  • 1 1/2 lbs. Yukon Gold potatoes, cut into 1-inch pieces
  • 2 tbsp. olive oil
  • 1 tsp ground coriander
  • 1 tsp kosher salt
  • Black pepper
  • 1/2 cup chopped parsley
  • 3 scallions, sliced
  • 2 tbsp. olive oil
  • 2 tbsp. champagne vinegar
  • Salt and pepper, to taste

Directions

  1. Toss potatoes with olive oil, ground coriander, kosher salt and black pepper. Roast on a preheated baking sheet at 450 until browned and tender, 40-45 minutes. Combine parsley, scallions, olive oil, vinegar, salt and pepper to taste; spoon over the potatoes.
