Beef-Chorizo Topping

Ingredients

  • 2 tbsp. olive oil
  • 1 lb. ground beef
  • 8 oz. fresh chorizo, casings removed
  • Kosher salt and black pepper
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 2 tbsp. tomato paste
  • 2 tbsp. chili powder
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 8 oz. can tomato sauce

Directions

  1. Combine the olive oil, ground beef and chorizo in a skillet over medium-high heat. Cook, stirring, until browned, 5-6 minutes. Season with salt and pepper.

  2. Add the onion and garlic to the skillet and cook, stirring, until softened, about 4 minutes. Clear a space in the pan and add the tomato paste, chili powder, cumin, coriander and paprika; cook, stirring, until incorporated. Add the tomato sauce and 1 cup water; stir everything together and simmer until thickened, 6-7 minutes.
