Mexican Pimiento Cheese Dip

Ingredients

  • 2 1/2 cups shredded pepper Jack
  • 1/2 cup plus 2 tbsp. sour cream
  • 1/4 cup mayo
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1 tbsp. fresh lime juice
  • 1 tsp ground cumin
  • 1/4 tsp cayenne, plus more for sprinkling
  • Veggies, for serving (such as small carrots, radishes, mini bell peppers, and cherry tomatoes)

Directions

  1. In a medium bowl, mix cheese, sour cream, mayo, cilantro, lime juice, cumin, and cayenne. Season dip. Transfer to serving bowl. Top with more chopped cilantro. Sprinkle with cayenne. Serve with veggies.
