overnight banana french toast

Ingredients

  • 1 16oz French bread cubed and divided
  • 1 8oz cream cheese
  • 2 C sliced bananas-about 3
  • 6 large eggs
  • 4 C milk
  • 1/2 C sugar
  • 1/2 C butter melted
  • 1/4 C maple syrup
  • 1/2 t ground cinnamon
  • fresh mint leaves-optional

Directions

  1. arrange half of bread crumbs in 13 × 9 greased pan

  2. sprinkle evenly with cream cheese and bananas

  3. top with remaining bread crumbs

  4. whisk together eggs, milk, sugar, butter and maple syrup

  5. pour over mixture in pan pressing bread cubes to absorb egg mixture

  6. cover and chill 8 hours

  7. preheat oven to 350F

  8. sprinkle with cinnamon and bake covered 30 minutes

  9. uncover and bake 30 minutes more until browned and set

  10. let stand 5 minutes before serving
