coconut shrimp

Ingredients

  • 1 1/4 C flour
  • 1/4 t seafood seasoning
  • 1 egg beaten
  • 3/4 C pineapple juice
  • shredded coconut
  • shrimp, peeled and deveined
  • oil for frying
  • sauce for dipping

Directions

  1. mix flour, seasoning, egg and pineapple juice until smooth

  2. put coconut in small bowl

  3. dip shrimp into batter, then coconut

  4. fry shrimp in oil for 1 1/2 minutes or until golden brown
