Ancho Pepper-Cherry Sauce

Ingredients

  • 1/2 cup pitted cherries
  • 1/2 cup sweet onion, minced
  • 1/2 cup cider vinegar
  • 1/3 cup ketchup
  • 3 tbsp. dark brown sugar
  • 3 tbsp. water
  • 1 tsp minced garlic
  • 3/4 tsp ancho chile powder
  • 1/2 tsp ground cumin
  • 1 tbsp. butter
  • 1/2 tsp salt

Directions

  1. Combine cherries, onion, and vinegar with ketchup, brown sugar, water, garlic, ancho chile powder and cumin in a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover and simmer until the onion is tender, 15-20 minutes. Transfer the mixture to a blender. Remove the center piece of the lid; secure the lid and place a towel over the opening. Process until smooth, about 30 seconds. Add butter and salt; process until smooth.
