Golden Caesar Dressing

  • 1/4 cup (50 mL) fresh lemon juice
  • 1/4 cup (50 mL) grated Parmesan cheese
  • 2 cloves garlic
  • 11/2 tsp (7 mL) Worcestershire sauce
  • 1 tsp (5 mL) anchovy paste (or about 2 anchovy fillets), optional
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) black pepper
  • 1 cup (250 mL) olive oil


  1. In a blender, combine the lemon juice, Parmesan cheese, garlic, Worcestershire sauce, anchovy paste, salt and pepper. Blend until smooth, scraping down the sides so that everything mixes evenly. Place the lid back on the blender and remove the cover from the small opening in the lid. With the blender running, slowly add the olive oil to the container, blending until the dressing is smooth and all the oil is incorporated.

  2. Makes about 1ΒΌ cups (300 mL) dressing.
