Taco Stuffed Shells

Ingredients

  • 1 tbsp. vegetable oil
  • 1 small yellow onion, chopped
  • 1 large red bell pepper, seeded and chopped
  • 1 lb. ground sirloin
  • 1 oz. package taco seasoning
  • 15 oz. can black beans, rinsed and drained
  • 2 cups shredded Mexican cheese blend, divided
  • 1 1/2 cups frozen yellow corn kernels, thawed
  • 1/4 cup chopped green onion
  • 1/2 box jumbo pasta shells, cooked as directed
  • Garnish: chopped green onion

Directions

  1. Preheat oven to 350. Spray a 13×9-inch baking dish with cooking spray.

  2. In a large saucepan, heat oil over medium-high heat. Add yellow onion and bell pepper; cook, stirring occasionally, until tender, about 5 minutes. Add beef and taco seasoning; cook, breaking up meat with the back of a spoon, until browned and crumbly, about 6 minutes. Remove from heat; stir in beans, 1 1/2 cups cheese, corn and green onion.

  3. Place cooked shells in prepared dish. Divide beef mixture among shells. Sprinkle with remaining 1/2 cup cheese. Cover with foil.

  4. Bake for 15 minutes. Uncover and bake until golden brown, about 5 minutes more. Garnish with green onion.
