Bacon Pimiento Cheese Waffles

Ingredients

  • 4 (8.5oz.) packages corn muffin mix
  • 2 cups whole milk
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 4 tsp onion powder
  • 12 slices bacon, cooked and finely chopped
  • 2 (4oz.) jars diced pimientos, drained
  • 1/2 cup shredded extra-sharp Cheddar
  • Pimiento cheese and chopped green onion, to serve

Directions

  1. Preheat waffle iron as directed.

  2. In a large bowl, stir together muffin mix, milk, eggs, melted butter and onion powder just until combined. Fold in three-fourths of cooked bacon, pimientos and Cheddar.

  3. Spray waffle iron with cooking spray. Pour about 3/4 cup batter onto hot waffle iron; cook until golden brown, 4-6 minutes. Repeat with remaining batter. Serve with pimiento cheese, green onion, and remaining bacon.
