Grilled Tomato, Onion and Meatball Pasta Toss

Ingredients

  • 1/4 cup Italian-seasoned bread crumbs
  • 1 large egg, lightly beaten
  • 1 tbsp. heavy whipping cream
  • 1 lb. ground beef
  • 2 garlic cloves, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 small red onion, sliced 1/2 inch thick
  • 1 pint grape tomatoes
  • 1 box tagliatelle pasta, cooked as directed
  • 2 tbsp. chopped fresh parsley
  • Garnish: chopped fresh parsley, shredded Parmesan

Directions

  1. Preheat grill to medium heat. Spray with cooking spray.

  2. Meanwhile, in a large bowl, stir together bread crumbs, egg and cream; let stand for 5 minutes. Add beef, garlic, salt and pepper, stirring until combined. Using a 1 1/2-inch scoop, scoop beef mixture, and shape into balls.

  3. Add meatballs, onion and tomatoes to grill; cook, turning as needed, until cooked through and vegetables are tender, 10-15 minutes. Remove from grill; chop onion.

  4. In a large bowl, toss together onion, tomatoes, cooked pasta and parsley; top with meatballs. Garnish with parsley and Parmesan.
