Spinach Artichoke Dip

Ingredients

  • 10 oz pkg Cascadian Farm Organic Cut Spinach, thawed, drained
  • 1/2 c. Artichoke harts, drained
  • 3 Scallions, chopped
  • 2 Cloves garlic
  • 1 1/2 c. Plain lowfat yogurt
  • 1 c. Lowfat ricotta cheese
  • 3 T. Parmesan cheese, fresh grated
  • 2 T. Lowfat cream cheese
  • Salt and pepper, to taste

Directions

  1. Place all ingredients in a food processor or blender and process until smooth.

  2. For best results, chill dip overnight.

  3. Serve with crackers or crudite.

  4. This dip also makes a great sandwich filling.

  5. Makes 3 cups.
