Rosemary & Garlic Spinach Cakes

Ingredients

  • 2 t. olive oil
  • 1 c. chopped onion
  • 3 cloves garlic, minced
  • 10 oz. pkg. Cascadian Farm Organic Cut Spinach, thawed
  • 2/3 c. instant potato flakes
  • 2 eggs, beaten
  • 1/4 c. parmesan cheese, grated
  • 2 t. fresh rosemary, minced or 1/2 t. dry, crushed
  • 1/2 c. unseasoned bread crumbs
  • 1/2 t. salt
  • 1/2 t. pepper

Directions

  1. Heat olive oil in a non-stick pan over medium heat.

  2. Add onion, garlic and spinach; saute for 3 minutes.

  3. Add remaining ingredients and combine well. Mixture should be thick and scoop-able.

  4. Scoop into 1-3/4 inch balls and flatten into patties.

  5. Spray pan with vegetable oil and saute both sides of cakes until golden brown.

  6. Place cakes on non-stick baking sheet and bake for 10 minutes at 375 degrees F until heated through.

  7. Enjoy as a side dish or serve with marinara sauce.

  8. Makes approx. 6 cakes.
