Swiss Mushroom Chicken

  • 4 chicken breast halves
  • 1 large egg
  • 1 cup crushed butter-flavored crackers (about 25 crackers)
  • 3/4 tsp salt
  • 1/2 lb. fresh mushrooms, sliced
  • 2 tbsp. butter, divided
  • 4 slices thinly sliced hard salami
  • 4 slices provolone


  1. Preheat the broiler. Flatten the chicken to 1/4-inch thickness. In a bowl, lightly beat the egg. Combine cracker crumbs and salt in another shallow bowl. Dip chicken in egg, then roll in crumbs; set aside.

  2. In a large ovenproof skillet, saute the mushrooms in 1 tbsp. butter until tender; remove and set aside. In the same skillet, cook chicken over medium heat in the remaining butter until no longer pink, 3-4 minutes on each side.

  3. Top each chicken breast half with a salami slice, mushrooms and a chees slice. Broil 4-6 inches from heat until cheese is melted, 1 to 2 minutes.
