Nashville Hot Chicken Sliders

Ingredients

  • Seasoned flour:
  • 4 cups all-purpose flour
  • 2 tbsp. garlic powder
  • 1 1/2 tbsp. kosher salt
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp cayenne pepper
  • 1 1/2 tsp Old Bay seasoning
  • 1 1/2 tsp sweet paprika
  • 1/2 tsp onion powder
  • Hot Chicken:
  • 2 cups buttermilk
  • 1/4 cup hot sauce
  • 3 1/2 lbs. chicken, cut into 12 pieces
  • Vegetable shortening or peanut oil, for frying
  • 1 1/2 tsp cayenne pepper
  • 1 tsp brown sugar, packed
  • 1/2 tbsp. sweet paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 3 tbsp. mayo
  • 1 dill pickle, cut into 24 thin slices
  • Lettuce
  • 12 pack King's Hawaiian Original Sweet Rolls

Directions

  1. To make the flour, in a large bowl, whisk together all of the ingredients until well combined. Pour the flour mixture into a heavy-duty brown paper bag and reserve for frying.

  2. To make the chicken, in a large bowl, whisk together the buttermilk and hot sauce. Add the chicken and submerge in the buttermilk mixture. Transfer to the fridge and marinate or 4 hours.

  3. Remove the chicken from the buttermilk mixture, allowing any excess to drain off. Place the chicken in the bag with the flour. Clasp the bag at the top and vigorously shake to completely coat chicken with flour. Remove chicken from the bag, tap off excess flour, and transfer to a baking sheet lined with a wire rack. Let rest at room temp for 15 minutes.

  4. As the chicken is resting, fill a cast iron skillet one-third of the way up the sides with melted shortening or peanut oil. Heat the oil to 340.

  5. When the oil is hot, add the chicken and cook until golden brown and crisp on both sides and the internal temp of the chicken reaches 165 (14-16 minutes).

  6. In a medium bowl, whisk together the cayenne pepper, brown sugar, paprika, chili powder and garlic powder. Stir in some extra hot sauce and a little oil until a loose paste has formed. With a pastry brush, coat the surface of the fried chicken with the sauce.

  7. Slice rolls in half horizontally; spread mayo on each side, place pickles and lettuce evenly across and add the chicken pieces.

  8. Separate sliders and serve hot.
