cc’s sawdust pie

Serves 10 people

Ingredients

  • 7 egg whites
  • 1 1/2 cups sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups pecans, coarsely chopped
  • 1/1/2 cups shredded coconut
  • 1 9-inch unbaked pie shell
  • Whipped cream, banana slices, mint

Directions

  1. Heat oven to 325 degrees.

  2. In a large bowl, mix egg whites, susgar, graham cracker crumbs, pecans and coconut.

  3. Stir until well combined.

  4. Pour mixture into unbaked pie shell.

  5. Bake for 38 minutes or until glossy and set.

  6. Remove from oven; cool completely on a rack.

  7. Top with whipped cream, banana slices and a sprig of mint, if desired.
