Banana Bread Pancakes

Ingredients

  • 1 1/4 cups self-rising flour
  • 1 cup almond or walnut milk
  • 1 cup chopped walnuts
  • 1 small banana, mashed
  • 1/4 cup coconut oil, plus more for skillet
  • 1/4 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • pure maple syrup, for serving

Directions

  1. In a bowl, stir all ingredients except syrup. Heat nonstick skillet or griddle over medium; brush with oil. Spoon batter by tablespoonfuls into skillet. Cook pancakes until browned and cooked through, about 2 minutes per side. Serve with syrup.
