shrimp and corn bisque

Ingredients

  • 1/2 stick butter
  • 1/4 C flour
  • 1 medium onion chopped
  • 2 C chicken broth
  • 10 oz corn
  • 4 medium redskin potatoes cubed and cooked
  • 2 C cream
  • 1 T dried parsley
  • 1 t salt
  • 1/2 t black pepper
  • cayenne pepper to taste
  • 1 lb raw, peeled shrimp

Directions

  1. melt butter in soup pot and make a rue

  2. cook onion until tender

  3. add broth

  4. stir in corn, potatoes, milk and seasoning

  5. cook 15 minutes on medium, stirring all the time

  6. add shrimp and cook on medium-low until done
