Chocolate, Butterscotch, and Peanut Cobbler

Ingredients

  • 6 tbsp. unsalted butter, melted
  • 1 cup self-rising flour
  • 1 1/4 cups granulated sugar, divided
  • 6 tbsp. unsweetened cocoa powder, sifted and divided
  • 1/2 cup whole milk
  • 1 1/2 tsp vanilla extra
  • 1/2 cup chopped salted peanuts
  • 1/2 cup butterscotch chips
  • 1/2 cup firmly packed light brown sugar
  • 1 1/2 cups boiling water
  • Sweetened whipped cream, to serve
  • Garnish: chopped salted peanuts, butterscotch chips, flaked sea salt

Directions

  1. Preheat oven to 350. Pour melted butter into a 9-inch square baking dish.

  2. In a medium bowl, whisk together flour, 3/4 cup granulated sugar, and 2 tbsp. cocoa. Whisk in milk and vanilla until smooth; pour batter over melted butter in dish. (Do not stir).

  3. In a medium bowl, stir together peanuts, butterscotch chips, brown sugar, remaining 1/2 cup granulated sugar, and remaining 4 tbsp. cocoa; sprinkle peanut mixture over batter in dish. Slowly pour 1 1/2 cups boiling water over batter. (Do not stir.)

  4. Bake until top appears dry and set, 30-35 minutes. Let cool for 20 minutes. Serve with whipped cream. Garnish with peanuts, butterscotch chips and sea salt.
