Grilled Fruit Salad

Ingredients

  • 1 tbsp. vegetable oil, plus more for greasing pan
  • 8 oz. package cream cheese, softened
  • 6 oz. vanilla yogurt
  • 4 tbsp. clover honey, divided
  • 1/2 tsp lemon zest
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. finely chopped packed fresh basil
  • 1 fresh pineapple, peeled, cored and cut into 1/2-inch-thick rings
  • 2 medium firm ripe fresh nectarines, pitted and cut into 8 wedges each
  • 2 cups halved fresh strawberries
  • 2 cups fresh blueberries
  • Garnish: fresh basil leaves

Directions

  1. Preheat a grill pan over medium-high heat; brush pan with vegetable oil.

  2. In a medium bowl, beat cream cheese, yogurt, 2 tbsp. honey, and zest with a mixer at medium speed until smooth. Refrigerate until ready to serve.

  3. In a large bowl, whisk together lemon juice, basil, and remaining 2 tbsp. honey until well combined.

  4. Brush pineapple and nectarines with vegetable oil. Grill fruit in batches until grill marks form, 3-5 minutes per side. Transfer grilled fruit to bowl with lemon juice mixture, stir in strawberries and blueberries. Serve with yogurt dressing. Garnish with basil.
