Bacon Avocado Salad

Ingredients

  • 8 oz. bacon, chopped
  • 1 1/4 cups diced cucumber
  • 1 cup quartered cherry tomatoes
  • 2 tbsp. seasoned rice vinegar
  • Salt and black pepper, to taste
  • 3 small avocados, peeled, pitted and diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onion
  • 4 cups mixed salad greens

Directions

  1. Cook bacon in a large skillet over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain on paper towels.

  2. Stir together cucumber, tomatoes, rice vinegar, salt and pepper in a bowl. Gently stir bacon, avocados, cilantro and green onion into cucumber mixture. Serve immediately over mixed greens.
