Grilled Pineapple Dessert with Greek Yogurt

Ingredients

  • 1 fresh pineapple, peeled, cored and cut into 6 rings
  • 2 lemons, juiced
  • 4 tbsp. sugar
  • 3 tbsp. fresh mint leaves
  • 7 oz. container plain Greek yogurt

Directions

  1. Cut each pineapple ring in half and transfer to a Ziploc bag. Stir together lemon juice and 2 tbsp. sugar in a small bowl; pour into bag. Seal bag and turn to coat. Chill 2 hours.

  2. Pulse mint leaves and remaining 2 tbsp. sugar in a food processor until finely chopped.

  3. Preheat a grill to high heat. Lightly oil grill grate.

  4. Drain pineapple, reserving marinade, then arrange on grate. Grill, turning once halfway through, until browned, slightly softened, and heated through, 4 to 6 minutes.

  5. Stir 3 to 4 tbsp. reserved marinade into yogurt to reach dipping consistency. Sprinkle grilled pineapple with mint sugar and serve with yogurt dip. Sprinkle dip with lime zest.
