Easy Keto Korean Beef with Cauli Rice

Ingredients

  • 10 oz. bag frozen steam-in-bag riced cauliflower
  • 2 tsp sesame oil
  • 1 lb. ground beef
  • 3 garlic cloves, minced
  • 1/4 cup soy sauce
  • 1/2 tsp grated fresh ginger
  • 1/4 tsp black pepper
  • 2 tbsp. chopped green onion
  • 1 tbsp. sesame seeds
  • Yellow or orange mini bell peppers, sliced

Directions

  1. Cook cauliflower as directed.

  2. Meanwhile, heat oil in a large skillet over medium-high heat. Add beef and garlic; cook, stirring and breaking up lumps with a wooden spoon, until beef is browned, 5 to 7 minutes. Stir soy sauce, ginger, and black pepper into beef. Simmer until sauce is thickened, about 3 minutes. Serve over cauliflower rice. Sprinkle with green onion and sesame seeds, then scatter with sliced bell peppers.
