Soy and Honey Pork Chops

Ingredients

  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1/4 tsp crushed red pepper
  • Pinch black pepper, or to taste
  • 4 center-cut pork chops
  • 1 large onion, cut into 1/2-inch-thick slices
  • 2 tbsp. canola oil

Directions

  1. Arrange coals on one side of a charcoal grill. Preheat to high heat. Lightly oil grate.

  2. Stir together honey, soy sauce, red pepper and black pepper in a bowl. Pour about 1/3 cup into a small bowl; set aside. Pat pork dry with paper towels. Brush both sides of pork and onion with oil.

  3. Grill pork directly over coals until lightly charred, about 3 minutes per side. Move pork to cooler side of grill and continue cooking, brushing both sides generously with honey mixture, 3 to 4 minutes more, or until cooked through.

  4. Meanwhile, arrange onion slices over cooler side of grill. Grill, brushing onions periodically with reserved honey mixture, until translucent and browned, 3 to 4 minutes per side. Transfer pork and onions to serving plates; drizzle with remaining reserved honey mixture.
