Nutty Chicken Fingers

  • 1/2 cup finely chopped pecans
  • 1/3 cup crushed cornflakes
  • 1 tbsp. dried parsley flakes
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 2 tbsp. milk
  • 3/4 lb. chicken breasts, cut into 1-inch strips


  1. In a shallow bowl, combine the first 5 ingredients. Place the milk in another shallow bowl. Dip chicken in milk, then roll in pecan mixture.

  2. Place chicken strips in a single layer on an ungreased 15×10×1-inch. baking pan. Bake, uncovered, at 400 until juices run clear, 12 to 15 minutes.
