Italian-Deli Pasta Salad

Ingredients

  • Kosher salt
  • 1 lb. penne
  • 1/3 cup mayo
  • 3 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 16 oz. jar giardiniera, drained and chopped
  • 1 cup diced provolone
  • 1 cup diced salami
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Black pepper

Directions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook as directed for al dente; drain and rinse under cold water.

  2. Whisk the mayo, olive oil and vinegar in a large bowl. Add the pasta, giardiniera, provolone, salami, parsley and basil. Season with salt and pepper and gently toss.
