Grilled Merguez Sausages with Veggie Skewers and Yogurt-Harissa Sauce

Ingredients

  • 1 orange bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1/2-inch slices
  • 1 red onion, cut into 1/2-inch wedges
  • 15 cherry tomatoes
  • Olive oil, for brushing
  • 1 lb. fresh merguez sausages
  • 4 naan breads
  • 1 cup plain Greek yogurt
  • 3 tbsp. harissa sauce
  • 1 scallion, chopped

Directions

  1. Alternately thread bell pepper, zucchini, onion and tomatoes onto 4 skewers. Brush with oil; season. Heat grill or grill pan to medium-high. Grill skewers, turning often, until veggies are tender, about 10 minutes. Grill sausages, turning often, until cooked through, about 10 to 15 minutes. Grill naan until charred in spots, about 2 minutes per side. In bowl, mix yogurt and harissa; garnish sauce with scallion. Serve skewers, sausages, and naan with sauce.
