Coffee-Rubbed Tenderloin Steaks

Ingredients

  • 1 tbsp. medium-grind ground coffee
  • 1 tsp kosher salt
  • 3/4 tsp sugar
  • 3/4 tsp granulated garlic
  • 3/4 tsp smoked paprika
  • 3/4 tsp chili powder
  • 1/2 tsp unsweetened cocoa powder
  • 1/2 tsp black pepper
  • 4 beef tenderloin steaks
  • 2 tbsp. unsalted butter

Directions

  1. In a small bowl, stir together coffee, salt, sugar, granulated garlic, paprika, chili powder, cocoa and pepper. Season steaks with coffee run. Let stand at room temp for 15 minutes.

  2. In a 12-inch cast-iron skillet, melt butter over medium heat. Add steaks; cook for 5 minutes. Turn, and cook until cooked to desired doneness, 5-10 minutes more. Serve immediately.
