Cornbread Scones

Ingredients

  • 1 cup plain yellow cornmeal
  • 1 cup shredded Cheddar cheese
  • 1/2 cup all-purpose flour
  • 1 tbsp. chopped fresh thyme
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg, beaten
  • 1/2 cup whole buttermilk

Directions

  1. In a large bowl, whisk together cornmeal, cheese, flour, thyme, baking powder, salt and baking soda. Using a pastry blender, cut in cold butter until mixture resembles a coarse meal. Stir in egg and buttermilk just until combined.

  2. Turn out dough onto a lightly floured surface, and knead until a soft dough forms, 3-4 times. Gently press dough into a 7-inch circle. Cut into 6 wedges.
