Chocolate-Swirled Banana Bread

Ingredients

  • Batter:
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 1 1/2 cups mashed ripe banana (about 4 medium)
  • 1/3 cup plain whole yogurt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • Swirl:
  • 1/4 cup chopped semisweet chocolate
  • 1/4 cup granulated sugar
  • 2 tbsp. light brown sugar
  • 1 tsp unsweetened cocoa powder

Directions

  1. Preheat oven to 350. Spray a 9×5-inch loaf pan with baking spray with flour.

  2. For batter: In a large bowl, whisk together flour, granulated sugar, salt and baking soda. In a medium bowl, whisk together mashed banana, yogurt, melted butter, eggs and vanilla until smooth. Fold banana mixture into flour mixture until well combined.

  3. For swirl: In a small bowl, whisk together all ingredients until combined.

  4. Spread one-third of batter in prepared pan. Sprinkle with half of swirl mixture. Repeat layers once. Using a knife, swirl layers together. Top with remaining batter, and spread with an offset spatula.

  5. Bake for 40 minutes. Cover with foil, and bake until a wooden pick inserted in center comes out clean, about 20 minutes more. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack. Store in an airtight container for up to 3 days.
