Spaghetti with Hearty Meatballs

Ingredients

  • 1/4 cup olive oil
  • 1 cup chopped red onion
  • 1 cup chopped orange bell pepper
  • 2 tbsp. minced garlic
  • 1/2 cup dry red wine
  • 2 (24-oz.) jars pasta sauce
  • 1 1/2 tbsp. dried Italian seasoning
  • 1 tbsp. sugar
  • 1 1/2 tsp kosher salt
  • 1/4 tsp crushed red pepper
  • Colossal Meatballs (see recipe)
  • 1/4 cup chopped fresh parsley
  • 1 1/2 (12 oz.) packages spaghetti, cooked as directed
  • Garnish: shredded Parmesan, chopped fresh parsley

Directions

  1. In a large Dutch oven, heat oil over medium heat. Add onion, bell pepper, and garlic; cook, stirring frequently, until vegetables are softened, 3-4 minutes. Add wine, and increase heat to medium-high; cook until most of liquid is evaporated, 4-6 minutes. Add pasta sauce, Italian seasoning, sugar, salt and red pepper; reduce heat to medium-low. Simmer, stirring occasionally, for 25 minutes. Reduce heat to low; stir in Colossal Meatballs and parsley.

  2. Divide spaghetti, sauce and Colossal Meatballs among serving plates. Garnish with cheese and parsley.
