Rubarb Crunch

One of my favorite recipes when I was growing up. My grandma Buffham made it for me.

Prep time: 15 minutes
Cook time: 60 minutes
Serves 12 people

Ingredients

  • Sauce:
  • 3/4 c. sugar
  • 2 tbsp. flour
  • 1/2 c. water
  • 1 teas vanilla
  • Crust:
  • 1 c. flour
  • 1 c. rolled oats
  • 1/2 c. brown sugar
  • 1/2 c. butter, melted
  • 3/4 tsp. cinnamon
  • 3-4 c. rhubarb/strawberry slices

Directions

  1. In saucepan cook sugar, flour and water together boiling until thick. Add vanilla to thickening.

  2. Combine flour, oatmeal and brown sugard in mixing bowl. Stir in butter and cinnamon until crumbly. Put 3/4 of crumbs in 9×9 inch cake pan and pack down to make crust.

  3. Place rhubarb/strawberries over crust.

  4. Pour sauce over rubarb/stawberries.

  5. Sprinkle remainder of crumb mixture on top.

  6. Bake at 350 degrees for 1 hour.
