Shepherd’s Pie Tot-chos

Ingredients

  • 28 oz. frozen tots
  • 1 lb. ground beef
  • Olive oil
  • 1 small onion, diced
  • 1 carrot, chopped
  • 2 tsp thyme, chopped
  • 1 tbsp. flour
  • 1 cup beef broth
  • 3 tbsp. ketchup
  • 1 tbsp. Worcestershire
  • 1/2 cup frozen peas, thawed
  • 2 tbsp. parsley, chopped
  • Salt and pepper
  • 1 cup cheddar, shredded

Directions

  1. Spread tots on baking sheet and bake at 450 until golden and crisp, 30-35 minutes.

  2. Meanwhile, brown ground beef in olive oil with onion, carrot and thyme in a large skillet over medium-high heat, 5 minutes. Sprinkle with flour, then add beef broth, ketchup and Worcestershire. Simmer until thickened, 7 minutes.

  3. Stir in peas and parsley; season with salt and pepper. Top the tots with the beef mixture and cheddar; broil until melted, 1-2 minutes.
