Breakfast Tot-chos

Ingredients

  • 1 lb. tots
  • 6 eggs
  • 1 cup cheddar, shredded
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp. chopped parsley
  • Ketchup, for serving

Directions

  1. Spread tots on a large cast-iron skillet and bake at 450 until golden and crisp, 30-35 minutes.

  2. Crack eggs on top and sprinkle with cheddar. Continue baking until the whites are set but the yolks are still runny, 5-7 minutes. Top with bacon and parsley. Serve with ketchup.
