Bacon and Egg Spaghetti

  • 1 lb. spaghetti
  • 6 slices thick-cut bacon, chopped
  • Olive oil
  • 1/3 cup Parmesan
  • Salt and pepper
  • 6 eggs
  • Chopped chives


  1. Cook spaghetti as directed. Drain, reserving 1 cup cooking water.

  2. Meanwhile, saute bacon in olive oil in a large pot over medium-high heat until crisp, 7-9 minutes.

  3. Add the spaghetti, 1/2 cup cooking water and Parmesan to the pot with the bacon. Cook, stirring, until coated, adding more cooking water as needed; season with salt and pepper.

  4. Fry eggs in olive oil in a large nonstick skillet over medium heat until the whites are set, about 4 minutes; season with salt and pepper. Top the pasta with the eggs and chopped chives.
