Spinach-Tomato Pita Dip

Ingredients

  • 3 eggs
  • 10 oz. package frozen chopped spinach, thawed and drained well
  • 1 cup cottage cheese
  • 8 oz. pkg. shredded cheddar cheese
  • 2 roma tomatoes, chopped
  • 3 tbsp. flour
  • 2 tbsp. butter, melted
  • 1/8 tsp salt
  • Chopped fresh parsley
  • Pita bread rounds

Directions

  1. Preheat oven to 350.

  2. Lightly beat eggs with a fork in a large bowl. Stir in spinach, cottage cheese, cheddar, tomatoes, flour, butter, and salt until combined. Spread into a 2-qt. baking dish.

  3. Bake 30-35 minutes or until slightly set, edges are bubbly and cooked through. Cool slightly before topping with parsley. Serve with pita bread.
