Apple-Tomato Dipping Sauce

Ingredients

  • 1 tbsp. canola oil
  • 1 large shallot, diced
  • 1 tbsp. tomato paste
  • 1 garlic clove, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp ground cloves
  • 1 lb. apples, coarsely chopped
  • 1 lb. tomatoes, coarsely chopped
  • 1/4 cup cider vinegar
  • 1 tbsp. brown sugar

Directions

  1. Heat canola oil in a large saucepan over medium heat. Add shallot and cook, stirring until starting to brown, about 2 minutes. Add tomato paste, garlic, salt, pepper and cloves; cook, stirring for 30 seconds. Add apples, tomatoes, vinegar, and brown sugar. Bring to a boil over high heat, then reduce heat to a simmer. Cook, stirring occasionally, until thickened, about 30 minutes. Let cool for 20 minutes, then puree in a food processor until smooth.
