Chicken and Quinoa Buddha Bowls

Ingredients

  • 3 cups Quinoa (see recipe), reheated
  • 4 chicken breasts (see recipe), reheated and sliced
  • 15 oz. can chickpeas, rinsed
  • 1 avocado, sliced
  • 6 radishes, thinly sliced
  • 1 cup sprouts
  • 3/4 cup Italian Dressing (see recipe)
  • 1/4 cup toasted seeds or chopped nuts

Directions

  1. Divide quinoa among 4 large shallow bowls. Top with chicken, chickpeas, avocado, radishes, and sprouts. Drizzle with dressing and sprinkle with seeds (or nuts).
